I sometimes make a spice tea, with butter, turmeric, ginger, pepper and cinnamon, perhaps full cream. All the buttery creaminess helps wash the spices down. Should be a good tonic.
Probably a little of both. You genetically evolve taste so things good for you taste better. Of course if your culture hasn't been chugging it down thousands of years it will likely taste awful even if it's great for you. I certainly hate it but I'm not surprised it has good qualities if it's been in constant use for so long.

I would argue that taste is something that is cultivated, rather than being something innate or inborn.
If that's right, then the question isn't "Why do good things taste bad?", but rather "Why do I have bad taste?".
